Healthy Fuel Recipe - Tuna Cakes

Hello my lovelies! It’s our favourite time of the week, the WEEKEND! And if you’re like me, you’re probably itching to find a new healthy but scrumptiously delicious recipe to try out. Well, fear not, I’ve got you covered!

This week’s Healthy Fuel Recipe will be tuna cakes. Not only are these so tasty, but they are macro friendly and packed with tons of protein. Great for post workout or just as an appetizer!

Prep time: 20 min Cook time: 10 min Total time: 30 min Yield: 4 cakes/patties

Ingredients:

· 2 cans of tuna (drained – very important that the tuna is drained really well)

· 1 raw egg

· 2-3 cloves minced garlic

· ¼ Red onion – finely diced

· ¼ Red bell pepper – finely diced

· 2 tbsp fresh parsley

· 2 tbsp fresh chopped green onions

· 1 tbsp fresh lemon juice

· 3-4 tbsp of breadcrumbs

· Salt and black pepper – to your preference

· 1 tbsp finely chopped hot peppers (or chilli flakes)

· 1 tbsp finely chopped thyme (optional)

· 2 tbsp olive oil

Method:

1. Drain water from tuna cans well

2. In a medium mixing bowl, combine all of the ingredients together

3. Divide the mixture into 4 equal parts. With each part, form into a ball, and then flatten to form patties. Place on a sheet of wax paper and let chill in the fridge for 10 minutes

NOTE: you can skip this step if you wish. However, I recommend doing it as it helps the patties stay together while cooking

4. In a skillet over medium heat, add 2 tbsp of olive oil. Gently place the patties in the pan, cook on each side until golden brown, so for a total of 3-4 minutes

5. Let cool and serve with lemon slices, or with some tartar sauce on a slider bun for a tuna burger!

Total Macros per serving (per 1 patty): Calories : 160 cal Carbs: 13.9g Fat: 8g Protein: 16g
