What do you like to eat for breakfast? I tend to like things on the sweet side, so this banana protein pancake recipe is one that hits the spot! If you’re not a total fan of protein powder, there are other alternatives to in place of the protein.
To sweeten these pancakes, I like to use ripe bananas. This adds a natural touch of sweetness as oppose to using processed sugar. For a high protein pancake like these banana pancakes, just simply add more protein powder to the mixture.
Can you reheat these pancakes?
Absolutely! I tend to make a huge batch of this batter and save some for the next day. When I’m ready to make them, I simply just reheat them.

Prep Time: 5 min Cook Time: 10 min Total Time: 15 min Yields: 2 Pancakes
Ingredients:
· 1 scoop whey protein (vanilla flavoured)
· 1 (very) ripe banana – mashed
· 2 eggs
· ¼ teaspoon baking soda
· 1 teaspoon coconut oil
· ½ teaspoon cinnamon powder (optional)
Toppings:
· Sugar- free Maple Syrup
· Fresh strawberries and sliced bananas
Method:
1. Separate the egg yolks from whites, placing them in different bowls.
2. Using a mixer, beat the egg whites for 2-3 minutes until soft peaks form.
3. Add the banana, protein powder and baking powder to the egg yolks and beat with mixer until smooth.
4. Gently fold half of the egg whites into the egg yolk mixture until thoroughly combined. Repeat with remaining half of egg whites.
5. Heat the coconut oil on a skillet over medium heat.
6. Pour ¼ cup of batter onto the skillet and cook for 1-2 minutes per side or until lightly browned.
7. Repeat the process with remaining batter. Serve immediately.
