Healthy Fuel Recipe: Spinach Feta Wrap

Since the protein pancakes from last week were a hit, I decided to continue with another healthy breakfast idea. I've been especially finding myself wanting something thats easy, convenient, and still healthy for days when I'm working super early in the morning.


These spinach feta wraps are so tasty and are literally the healthier copycat version of the Starbucks wrap. This used to be my go to breakfast when I would be on the go for school and work. It did become a bit too expensive, you can imagine how much it all added up at the end of the week.


I soon realized just how easy it would be to make my own spinach feta wraps, which turned out to be not only cheaper and easy to do, but so much more delicious- You know ALL the ingredients in them!


I used whole wheat wraps for this recipe, but you can use any wrap of choice. TIP: The larger the wraps, the easier to hold more fillings! You can use carton egg whites or fresh ones. I only add salt and pepper to it, but you can change it up with other spices. Fresh or frozen will work, as both will be cooked down until wilted. Crumbled feta is best, as it is evenly distributed amongst the wrap, but you can crumble a block of feta too. Traditional Starbucks feta wraps use a spread, but using chopped sun dried tomato adds extra flavor to it. They also have no added sugar or fat. 


Prep Time: 5 min Cook Time: 5 min Total Time: 10 min Yield: 1 Wrap


Ingredients:

  • 1 Large Tortilla (use the type of your choice i.e. whole wheat, gluten-free, etc)

  • 2 Large Egg Whites

  • 1/2 cup Fresh or Frozen Spinach

  • 4 Sundried Tomatoes - chopped

  • 2 tbsp feta cheese - crumbled

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • any other spices you want to add!


Method:

  • On medium heat, coat a non-stick pan with oil or cooking spray. When pan is hot, add your egg whites with spices of choice. Fold over and cook both sides. Remove from the pan.

  • Add your fresh or thawed frozen spinach and cover for 1-2 minutes, until wilted. Set aside.

  • Place your tortilla on a large piece of parchment paper. Add your eggs whites, wilted spinach, sun dried tomatoes and crumbled feta and wrap up. If made fresh, cut in half or if prepared in advance, heat in a sandwich press or grill until warm.
