Healthy Fuel Recipe - Tomato Bruschetta Chicken Casserole

Hey guys! I'm so sorry for being away, but I'm back again with some more awesome recipes! Today, I will be sharing with you a recipe so simple and tasty, you will find yourself making it over and over again! I made this dish this past weekend, and must I say, it was a HIT with all of my guests. They were raving about it the entire time. Most thought it was a super difficult dish to prepare, but this is such an easy meal to make, it's even ideal for a mid week dinner idea!


What makes this recipe one of my favourites, is the fact that it consists of all simple ingredients. Yet, the flavours come together so well, you'll think a professional made it!


Prep Time: 20 min Cook Time: 35 min Total Time: 55 min Yield: 4 Portions


Ingredients:

- 1 lb chicken breasts or tenders cut into bite sized pieces

- 1 tbsp olive oil

- 6 ripe roma tomatoes, chopped and lightly sprinkled in salt

-1-2 medium onions, chopped

- small handful of basil leaves, chopped

- 4-5 fresh garlic cloves, minced

- 1-2 stock of green onion

- 1 cup mozzarella cheese

- 1 tsp dried oregano

- 1 tsp fresh thyme

- 1 tsp rosemary

- 2 tbsp balsamic vinegar

- 1/2 tsp salt

- 1/2 tsp black pepper

- chilli flakes (optional)


Method:

- preheat oven to 375 degrees F.

- in a blender, take 4 cloves of garlic, some of the onion, salt, pepper, thyme, basil, 1 green onion, and a little bit of water, blend until well combined.

- use green seasoning mixture to marinade chicken breasts, cover with plastic cling wrap, and let marinade for 15 minutes

- heat olive oil in a skillet over medium to high heat

- add chicken breasts in, cooking and stiring until golden brown on the sides and almost cooked through

- transfer the chicken breast to an 8x8 baking dish (you can use cooking spray to coat the dish so nothing sticks)

- top the chicken with the tomatoes, oregeno, rosemary, garlic, onion, and drizzle of balsamic vinegar.

- sprinkle mozzarella cheese on top

- place your casserole into your preheated oven, uncovered, and bake for 20 minutes, just until the cheese is melty and sauce is bubbling at the bottom of the dish

- remove from oven and cover with aluminum foil

- allow casserole to rest for 5 minutes




You can serve this on its own, or with a side of veggies like asparagus, or even over whole wheat or gluten-free pasta.
